Storing and Reheating Omelettes
Omelettes are usually at their best freshly made. If you want to keep one for later, check the Reheating Suitability note on its recipe page. The filling affects how well the omelette will taste after reheating.
High means the recipe generally reheats well. Medium means it is usually better fresh, although it can still be reheated.
Refrigerating a Cooked Omelette
After cooking, allow the omelette to cool, cover it and put it in the fridge within two hours. Keep it refrigerated and eat it within 48 hours.
If it has been left out for longer than two hours, do not save it for later.
Reheating
Reheat an omelette only once, until it is steaming hot throughout. You can use a pan or microwave. A pan gives you more control over the texture. If using a microwave, heat it in short bursts and check the middle as well as the edges.
Soft cheeses may change texture and fish fillings can dry out when reheated. If you can, cook these omelettes just before eating them.
We do not generally recommend freezing finished omelettes because their texture often suffers. If you want to prepare ahead, it may work better to get suitable fillings ready and cook fresh eggs on the day.
